Drag Specialty cylinders 0931-0823 and Weisco K2787 black coated pistons 11:1, $699 shipped US 48 states.
List price is $866 plus shipping.

Are the current batch of MOCO cases consistent enough that you can trim the cylinders for ~zero deck prior to shipping to the end user?
Ignorance is bliss, and accuracy expensive. How much of either can you afford?

I dont know. This is something that is an awkward item to deal with unless the bike is here. I never considered just cutting them ahead of time and that would be great if I had some reliable number for cylinder length. Interesting!

The chart looks familiar. The S&S cylinders you supplied for my build fit perfectly. Ended up with approximately zero deck using a .014 base gasket. Did several heat cycles last night. Sounds pretty good with the Billet Cat. Soon as it stops raining I'm going to take it out for a ride to seat the rings.

It was a difficult decision. It came down to the cam from Wes  and the Rocket 544. Chris was able to get me a dyno of a build very similar to mine. The results were impressive so I went with the Rocket cam. Sould be getting it tuned within a week or so. I'll update you once done.
