New Andrew cams and timing adjustment question

When buying new cams on the Andrews site is see that they list the stock timing for carb and injectors. Then they list the timing for their cams .
So does this mean that you should or must change the timing to match the new cams to have a  properly tuned engine ?
Because I did do the Andrew TW-21s in my 05 Deuce and the bike runs fine , but am I missing out on the true  performance of the cams .

That's valve timing, not ignition timing.
