Cam advice

Curtisjames, when riding hills, especially spirited riding, you want to be in the sweet spot of the  cam range, that is nowhere near 2000 rpm, even with a school bus cam. Get it in the 3000+ range when pulling a decent grade. I have a '12 Ultra with stock cams, I cruise at about 2400 rpm lazy, 2700 rpm normal, 3000+ rpm when the  hills and traffic come into play. It does run out of juice about 4500-5000, time for upshift, and back down a gear once rpm drop to where I want more pull than just roll on power.
These motors will loaf along at low rpm, but that is not where you want to be to accelerate briskly.
It definitely seems your pipe is a problem, and a better tune might help. Fuel Moto does a good job flashing with known combinations, but your pipe is an outlier and they probably guessed on the tune as well as they could.

I gotcha yea seems like I need to rev it out more and get a different exhaust

A clarification on gear, speed, rpm, and acceleration, I just got back from a ride and noted each.

3rd gear, 30 mph, 2000 rpm, good roll on acceleration. 40 mph, 2500(?) rpm, very good throttle response.

4th gear, 40 mph, 2000 rpm, good roll on acceleration. 50 mph, 2500 rpm, very good throttle response.

5th gear, 55 mph, 2500 rpm, good roll on acceleration. 65 and 70 mph, very good throttle response.

6th gear, 70 mph, 2500 rpm, so-so acceleration. 80 mph, better throttle response.

I was surprised that the rpm were that low when cruising, I guess I don't pay attention much. When getting on it to pass, pull a grade harder, definitely a downshift in order. I usually shift by 4000 or 4500 rpm when harder on it.
I think a better pipe and tune would help your situation. A cam and tune on top of that would be even better.
As far as the 555 cam I mentioned earlier, I was referring to the T-man 555 Torquester, I've read it works better in stock motors than the Woods 555.
