Lots of competent shops to chose from. One you might consider is Larry's Motorcycle and Machine. Larry still rides an Evo too, and can machine and build top to bottom. I know from personal experience he's honest and fair.

Send the heads and cylinders out, find a local indy to balance and true that five-piece Evo crank when you get the cylinders and pistons back. Lots of good shops to have valve jobs done. Some of them are on this forum but not all. I would recommend staying away from ambulance chasers and everyone thinks the shop that did theirs is 'The Best'.

How do you know it's a 5 piece? He didn't state the year.

I don't, but it really doesn't make a difference if its a 3 or 5 piece crank. Any indi that can do one can can do the other and you probably know that.

A vote for Hillside too as he is one of the few that will not sandbag you.
What do I mean>?
It is done when he says it will be done!
Some shops are backlogged for 6 months... but they don't tell you that.
And,  if you ever get a chance to walk through his shop , you will be impressed.
Esp if you look at his dyno and his dyno memorabilia on the wall.
I am not easily impressed...but Scott and the crew are great!
