I got a map that was tuned on a different bike for the same parts. I compared it to SEST Map that was for a similar setup.

I noticed the main difference in the MAPs were that the customer map has 45 from 1750rpm all the way up on both the 15 and 20 column.

Why do you think this was done?

This is on the front and rear cylinders.

I'm getting a slight ping with the custom map when riding 2up at 70-90 mph rollon full load going up a hill or high head winds in both 5th and 6th gear). Can this be the cause? (I also enriched the accel enrichment but have not tested it yet)

Riding 2 up loads the motor down more and in most cases creates more engine temperature.  The 15 and 20 kPa columns have nothing at all to do with your issue. A stock HD motor idles between 30 - 45 kPa, as you run the motor up under any load you will go up in values until you get to ~ 100kPa. So the operating range in your test conditions will be somewhere between 30 - 100 kPa.
The Best you know, is the Best you've had........ not necessarily the Best.
