Wheel swapping

So, I have seen some various info about this topic, but I was hoping to get a definitive (as much as possible) answer in one place.  I want to run a tubeless tire on my 2005 heritage softail for an extended road-trip.  Since it is temporary, and I am more concerned with the safety/convenience I am not concerned with the looks, and would like to do it cheaply as well.  I am hoping that I can buy one of the abundant sets of take-off factory touring bike wheels that are on Ebay.  What I am hoping to find here is:

What year did they switch to sealed bearings?
Are the axle sizes the same? And if not, can they be changed?
Is it a problem that the touring bike wheels have a flange for two brake discs even if I am only using one?
Will the heritage chrome "hubcap" fit on the right side of the wheel?
Anyone done this successfully?
