cv carb help on 2001 sportster

im getting ready to rebuild my sportster carb. i have never done anything like this before other than jets it there anything else i need how do i know what jets to use i think this has been rejetted already because when i bought the bike it had drag pipes on it a ran good i now have a pro pipe on it but its at times acting like its not getting gas.
also what spark plug wires are most people using thanks
