Buffalo is lower in cholesterol and fat, therefore drier and more "woody". If you mix it with hamburger, you are just adding back all of the fat and cholesterol, which is why it tastes better that way. But you've lost all of the health benefit of eating the buffalo instead of beef. If you're going to mix it, you might as well save the extra money and just eat beef.  :crook: ~JC~
If I had to understand, You wouldn't explain.

If you really like buffalo meat, the cheapest way to get it is go to an auction (like at custer state park in SD). Bid on a young female. the local butchers shop in rapid city will arrange transportation of the live buffalo and shoot it, then hang it for the appropriate time. They will slice it up how you want it (several options). They pack up the cuts and freeze for you. pack it up in some dry ice and haul it home for about $3-$4 a pound. That includes burger, roasts, and steaks... An 800 lb female gave us about 350 pounds of meat.

Plus you get the option of keeping skull and hyde to have mounted as a head on the wall or a nice rug...

You can get the sandwiches and burgers at the Lake Tobias Petting Zoo near Halifax too. Emu too or oastrich   I forget which. Maybe we should have TooLow bring some next time we get together?
