Which cam for Fatboy 1994

I want to do the base gaskets on my 1994 FatBoy and at the same time install a new torrington camshaft bearing and a new camshaft. Now the original Harley N camshaft are installed
Now I don't know which one to get. 
I don't need power, just torque from idle speed up to 3000 rpm or more. I rarely get over 3000 rpm, mostly around 1800 to 2500 rpm.

What should I get? 
Adrews EV23 or EV27

At the moment I have drag pipes installed, but I'll probably switch to Jekill&Hide

With your riding style the EV23 would probably be the choice.

You have an S&S OES listed as one of your options. I suggest you follow your link and read their description for the OES cam.

Of all the aftermarket cams you have listed, I would choose the 490LR. Have never run it, and do not know anyone that has. But I know this. It is a very new design from a company that has invested heavily in computer simulations for camshaft design. S&S would not do any IRAD if they didn't feel there was a place in the market for it. The numbers look good to me.

That being said, internet forums are infested with 'experts' that don't know but act like they do. Me included. Do your own research, and by that I mean look at the various online camshaft comparators, and the dyno sections of every harley forum you can find. Make up your own mind. Look for data, not keyboarders regurgitation stuff they read  that was written by other keyboarders.

One cam you did not list, and I confused the 23 with it, is the EV13. A cam for heavier bikes that do not get ridden much in the higher rpm, a low end torque cam, good for cruising.

Over the past 30+ years I have tried a ton of them. For a mostly stock bike that's seldom sees 4000, I would highly recommend the EV-13. Been there, done that, you will like it. It's very similar to the Crane Fireball 300-2b (no longer available), which is what I have in my currently mostly stock '92. Makes the torque where you need it.

Fitted an Andrews ev13 for a bloke that rides like you. He's very happy. I guess you know to ditch the plastic breather for a steel one

That 490LR does seem a good choice just from the write up and events, wonder if anyone on here has run or tuned one yet?

I have run DM 530  then a W8
I cant feel much difference as they both pull very hard and have a lot left at any throttle position
